A SKU is what you sell. It points at a finished-good part and adds everything commerce needs that engineering doesn't carry.
What a SKU holds

Why it's separate from the part
One finished-good part can be several SKUs — different regions, different packaging, different bundles. Keeping them separate means engineering isn't polluted with commercial variants, and commercial data can change without a revision.
Cost
Effective cost comes from the BOM rollup. Where commercial reality differs — a negotiated price, a bundled discount — override it. Overridden values are flagged so nobody mistakes one for a computed figure.
